Nutty Atta Laddoos !

ABOUT Nutty Atta Laddoos ! RECIPE

Have made these power packed and protein and iron rich laddoos in winter ,the peanuts and the sesame seeds give it the nutty flavour which blends very well with the jaggery and the coconut to give a rich,warm flavour !

Ingredients Serving: 6

  1. Wholewheat Flour- 3/4th cup
  2. Ghee- 4 tbspn
  3. Peanuts- 1/2 cup
  4. Green Cardamom/ Choti Elaichi- 4-5, powdered
  5. Jaggery/Gud- 2 cups
  6. White Sesame Seeds/ Safed Til- a generous handful
  7. Dry Fruits of your Choice- Like slivered Almonds, finely chopped pistachios and Raisins
  8. Dessicated Coconut- 2 heaped tbspns
  9. Water- 2 cups or more,as required

Instructions

  1. Roast sesame seeds lightly on a non stick tawa and keep aside.
  2. Roast the peanuts till light brown, cool and coarsely grind them and keep aside.
  3. In a heavy bottomed/ non-stick kadhai/ pan, heat the ghee.
  4. Now add the wholewheat flour and mix well. Keep stirring on low-med heat till it attains a golden brown tinge and a warm aroma starts enveloping the surroundings .
  5. Add the water carefully,mindful of the splutters and keep stirring briskly as you do so, to avoid lumps.
  6. Add the jaggery, broken into pieces and mix in.
  7. The jaggery will start melting into the atta mixture , now at this point , add the peanuts and the sesame seeds.
  8. Keep stirring on low heat till the mixture starts thickening.
  9. Add the powdered cardamom and cook covered on low heat till the mixture attains a thick halwa like consistency .
  10. Switch off the gas flame.
  11. Cool the mixture at room temperature.
  12. Mix in the dry fruits.
  13. Shape into laddoos and roll in dessicated coconut. Enjoy !
