ABOUT Homemade Ghevar RECIPE

Ghewar is a honeycomb dessert from rajasthani cuisine. It is a disc shaped crisp cake made up of all purpose flour,soaked in sugar syrup. It is made specifically during rainy season for high degree of moisture in weather.

Ingredients Serving: 3

  1. Ghee 1/3 cup
  2. Ice cubes 4-5
  3. All purpose flour 1 cup
  4. Milk 1/3 cup
  5. Chilled water 2 cups
  6. Oil for deep frying
  7. Rabri 1 cup
  8. Chopped nuts 2 tbsp
  9. For sugar syrup
  10. Sugar 1 cup
  11. Water 1/2 cup
  12. Cardamom powder a pinch

Instructions

  1. TAKE 1/3 CUP MELTED GHEE, ADD 4-5 ICE CUBES
  2. RUB IT VIGOROUSLY FOR 2-3 MINS
  3. RUB TILL WHITE & CREAMY LIKE THIS
  4. ADD 1 CUP ALL PURPOSE FLOUR, MIX WELL
  5. ADD 1/3 CUP MILK
  6. GRADUALLY ADD 2 CUPS OF CHILLED WATER TO THE MIXTURE, MIX
  7. PREPARE A THIN, LUMP FREE BATTER LIKE THIS, SET ASIDE
  8. FOR THE SUGAR SYRUP- HEAT 1 CUP SUGAR WITH 1/2 CUP OF WATER
  9. BRING TO A BOIL, SIMMER FOR 4-5 MINS, SET ASIDE
  10. FILL THE READY BATTER IN A SAUCE DISPENSER
  11. HEAT OIL TILL SMOKING POINT IN A DEEP, FLAT BOTTOMED PAN, SQUEEZE 2-3 TSP BATTER IN THE CENTRE
  12. POUR THE BATTER FROM THE HEIGHT OF 6-7 INCHES IN THREAD LIKE STREAM LIKE THIS
  13. MAKE A HOLE IN CENTRE, POUR MORE BATTER IN THE MIDDLE
  14. KEEP LAYERING TO GET THE DESIRED THICKNESS- APPROX 1/3 RD BATTER FOR A 7" GHEVAR
  15. FRY TILL GOLDEN BROWN & CRISP FROM BOTH SIDES, REMOVE & PLACE ON A WIRE-RACK
  16. TOP GHEWAR WITH WARM SUGAR SYRUP, LAYER WITH RABDI, GARNISH WITH DRY FRUITS
