Ingredients Serving: 4

  1. One coconut, One onuon cubed, round Cut carrot 2,Mushrooms Sliced1/2 cup, 1 cubed capsicum Red thai curry paste 2-3 tsp , salt to taste. Boiled rice to serve along with curry.

Instructions

  1. Remove the coconut milk by grinding in the mixi, adding water. Remove a thick milk for the first one which is thick and good for the curry. .In a pan add A tsp oil,add the vegetables and saite for 2-3 minsas we need to keep the vegs crunchy. Add the thai curry paste, and saute. Add the coconut milk little water and keep stirring so that the milk does not seperate to milk and water. Serve hot withboiled rice.
