I love this mango pickle recipe which is spiced up with the right ingredients to leave your mouth watering

Aam ka Achar (Mango Pickle)

Ingredients to make Aam ka Achar (Mango Pickle)

  • 500gms Raw green Mangoes( wash dry and cut into small pieces)
  • 1/2 cup salt
  • 2 tbsp onion seeds(kalonji)
  • 2 tbsp red chilli powder
  • 1 tsp turmeric powder
  • 1 1/2 tsp fenugreek seeds
  • 1 tbsp fennel seeds
  • 1 tsp mustard seeds
  • 1 cup mustard Oil

How to make Aam ka Achar (Mango Pickle)

  1. In a clean and dry glass jar, place a few mango pieces at the bottom and add a layer of salt and repeat until you finish all the mangoes.
  2. Let the jar rest near a sunny window for a week or two.
  3. Roast fenugreek seeds, aniseed, mustard and onion seeds, let cool and pound or process it into a fine powder.
  4. Mix this, fennel seeds, mustard , turmeric powder and chilli powder together
  5. In a bowl, mix this spice mixture with mangoes, coat evenly.
  6. Heat oil in a pan till smoky and turn it off. Let it cool.
  7. Stuff the magoes into a jar and pour the oil until 1/4 head space.
  8. Leave the jar in the sun for two weeks.
  9. Enjoy with parathas.
