ABOUT Ciabatta Chicken Sandwich RECIPE

A sandwich made with chewy bread and layers of whole grain mustard. We love this version with leftover chicken.

Ingredients Serving: 2

  1. 1 loaf ciabatta bread
  2. 1 tsp butter
  3. 2 tsp whole grain mustard
  4. 1 chicken breast cooked
  5. 1 tblsp mayonnaise
  6. Salt to taste
  7. Pepper to taste
  8. 4 leaves of lettuce
  9. 2 tomatoes sliced
  10. 2 slices of cheese (optional)

Instructions

  1. Slice the chicken breast into thin strips. In a bowl add the mustard, mayonnaise, salt and pepper and mix well. Add the chicken breast and cover it fully.
  2. Cut the ciabatta horizontally so you get two equal halves.
  3. Smear butter on both slices of bread, leaving the crusty part of the bread unbuttered.
  4. Arrange the cheese (if using) on to the bottom layer of the bread. Layer with lettuce.
  5. Arrange the chicken on top of the lettuce and put the tomatoes on top of it.
  6. Close the sandwich and then cut in half. Serve with dip or sauce of your choice.
