Ingredients to make Eggless coffee cake

  • All purpose flour 3/4 cup
  • Baking soda 1/4 teaspoon
  • Baking powder 1/2 teaspoon
  • Salt 1/4 teaspoon
  • Sugar 3 tablespoons
  • Butter 1/4 cup or 50 gms
  • Condensed milk 100 gms
  • Coffee decoction 1/4 cup

How to make Eggless coffee cake

  1. Preheat the oven to 180 degree centigrade.
  2. Sieve flour, baking soda, baking powder, cinnamon and salt twice.
  3. Whip the butter and condensed milk and sugar in a bowl, until it is fluffy.
  4. Add the dry ingredients and coffee decoction alternately in the butter mixture and mix.
  5. Pour the mixture in a greased 6 inch cake tin. Tap the cake tin a few times to let the air bubbles escape and to level the batter.
  6. Bake for 25 minutes or until a toothpick comes out clean and remove from oven immediately.
  7. Cool for 10 minutes in the tin itself and then remove.
  8. For icing : 2 cups of powdered sugar and 1 cup of butter and 1/4 tsp of salt. Whip until soft and add 4-5 tbsp of coffee decoction depending on the smoothness of your choice.
My Tip: DO NOT OPEN THE OVEN DOOR FOR THE FIRST 20 MINUTES. I used filtered coffee decoction, you may add instant coffee to hot water, but make sure to add thick black coffee. Double the above ingredient quantities to half, to make an 8 inch cake. I felt that the filter coffee decoction gave it the bitterness and extra coffee kick.
