ABOUT Egg / Mutta Thoran RECIPE

Grated coconut roasted in coconut oil adds flavour to the eggs that are cooked along with the coconut . Kerala style Mutta Thoran is a simple yet delicious dish .

Ingredients Serving: 3

  1. Large eggs 4
  2. Freshly grated coconut 4 tablespoons + 1 tablespoon
  3. Onions medium sized 2 finely chopped
  4. Tomato small 1 finely chopped
  5. Coconut oil 2 tablespoons
  6. Salt as required
  7. Turmeric powder 1/4 teaspoon
  8. Red chilli powder 3/4 teaspoon
  9. Curry leaves a sprig
  10. Cilantros finely chopped for garnishing

Instructions

  1. Heat coconut oil in a pan .
  2. Add curry leaves .
  3. Add the finely chopped onions . Sauté till light brown .
  4. Add the grated coconut 4 tablespoons. Roast till they turn dry and aroma released.
  5. Add the tomatoes and sauté till soft .
  6. Add turmeric powder , red chilli powder and salt .
  7. Mix and sauté for 2 minutes .
  8. Beat 4 eggs in a bowl . Pour the eggs to the pan on top of the masala .
  9. After 2 minutes , when egg is half way cooking , toss the content quickly so that eggs , masala , coconut combines well .
  10. Fry till the content looks dry . That’s the Thoran consistency .
  11. Garnish with chopped Cilantros and a tablespoon of fresh grated coconut .
  12. Egg Thoran is ready . Serve hot.
