ABOUT Instant Sweet Appe/Appam RECIPE

Instant Wheat appes are soft, fluffy sweet fried Indian dumplings; made with whole wheat flour, jaggery (unrefined sugar), coconut and cardamom powder.

Ingredients Serving: 10

  1. 2 cups wheat flour
  2. ½ cup to ¾ cup grated coconut
  3. 1 cup grated jaggery/unrefined Indian sugar/brown sugar
  4. ¼ cup chopped cashew nuts
  5. 8 to 10 green cardamoms, powdered
  6. Pinch of salt
  7. ¼ teaspoon baking soda
  8. Ghee/clarified butter for frying

Instructions

  1. To make sure the jaggery does not have any impurities, add some water to jaggery in a small saucepan, melt completely and strain to remove any stones, dirt or any other foreign particles. Gather all ingredients for the appe batter.
  2. Take all ingredients for the appe batter in a bowl and mix well.
  3. Add about 1 to 1 ½ cups of water to mix to a smooth thick batter of pouring consistency.
  4. Heat an appe pan/ebilskiver pan on high heat. Once hot, add about ½ to 1 teaspoon of ghee/clarified butter in each mould or cavity.
  5. Pour small spoonfuls of batter into each cavity till three-fourths full.
  6. Lower the heat to medium low and cook covered, till the bottom of the batter is cooked and brown. Slowly, flip each of the appes and cook the other side. If you want, you can add some more ghee again.
  7. Close and cook again till it is fully cooked and golden brown (test with toothpick; if it comes out clean without any wet batter sticking, it is done). Remove from pan. The same procedure should be followed for the rest of the batter.
  8. Serve hot along with evening tea or coffee.
