ABOUT Chocolate, Cherry and Almond Cookies RECIPE

Super easy, egg-less cookies filled with dried fruit, nuts and chocolates. The cookie dough can be kept in the freezer for 2-3 months so you can just bake and have fresh cookies anytime.

Ingredients Serving: 8

  1. All purpose flour/ maida- 1 cup
  2. Powdered (confectioners) sugar- ½ cup
  3. Unsalted Butter- 120 grams (softened)
  4. Almond flour/almond meal (ground almonds)- ¼ cup
  5. Vanilla extract- ½ tsp
  6. Salt- ¼ tsp
  7. Dried cherries- 1/3- ½ cup (chopped)
  8. Chocolate chips- ¼ cup
  9. Almonds- 6-8 pieces (chopped/sliced)

Instructions

  1. Put room temperature butter and sugar in a bowl in the bowl of a stand mixer or a large bowl if using a handheld mixer. In another bowl combine the flour, almond flour and salt.
  2. Beat the butter and sugar till smooth and creamy. Add the flour mixture and mix just until everything is combined and a dough forms, add the cherries, chocolate chips and almonds and stir (using a spoon/spatula) to combine.
  3. Place the dough on a long sheet of plastic wrap/cling wrap and form it into a ‘log’ shape, about 2-3 inches wide. Place the wrapped log of dough in the freezer until firm (about one hour).
  4. Preheat oven to 170C. Line a baking tray with parchment paper/ baking paper. Remove dough from the freezer (wait for it to soften if it’s frozen solid). Cut ¼ inch slices from the dough, place on the baking sheet leaving a gap of about 1 inch.
  5. Bake till the cookies start to turn golden from the edges, about 20 minutes. After 5 minutes transfer the cookies from the baking sheet to a rack to cool completely.
