ABOUT Summer Fruit tart with ice cream RECIPE

Summer fruit tart is a delicious, super easy and 3-ingredient tart filled with butter-scotch ice cream, mango coulis and topped with fresh seasonal fruits. It is an extremely versatile make ahead dessert that will take minutes to whip up. This recipe has been inspired from Sonali of Sugaretal.

Ingredients Serving: 10

  1. 250 g wholewheat oatmeal cookies
  2. 75 g unsalted butter, cubed
  3. 1 litre eggless butterscotch ice Cream (store bought), softened, leave out for 5-10 minutes before you need to fill the tart
  4. 1/2 cup mango/strawberry/blueberry coulis (whichever you like, I went with mango coulis)
  5. Your favorite seasonal fruits. I used mango, lychee, chickoo, plums, grapes.
  6. Optional: Soak the fruits in kirsch or vodka for a gentle kick.

Instructions

  1. I used a 21 cm spring form pan for this. You can use any tart pan of any shape with a removable base.
  2. Start by making the tart base: Use a rolling pin to make fine crumbs of the cookies. Alternately use a processor. I prefer the rolling pin
  3. Add the cubed butter to it and rub with your fingers till it reaches a sand like texture. Test a little by pressing some between your fingers, it should hold form.
  4. Spoon the crumb mixture into the tart pan and use your fingers to spread it all over the pan and over the sides.
  5. Then, press the mixture gently with the base of a small glass and ensure it sticks to the pan.
  6. Freeze for 30 minutes or longer till set. When frozen, (make sure of this), pour the softened ice cream on to the prepared tart case. Transfer to the freezer. Freeze for at least 4 hours, preferably overnight.
  7. Remove from freezer 10 minutes before serving. Drizzle with whatever fruit puree you like and top with your favorite fruits. Dust with icing sugar. Serve!!
