Ingredients to make Saffron and cardamom shortbread cookies

  • 1/2 cup or 115 grams unsalted butter, at room temperature
  • 1/4 cup or 35 grams powdered sugar
  • 1 cup or 125 grams all-purpose flour
  • 1 tsp cardamom powder
  • 1/2 tsp saffron
  • 1 tsp vanilla extract

How to make Saffron and cardamom shortbread cookies

  1. Beat the butter until creamy.
  2. Add in the cardamom, saffron threads and vanilla. You can crush the saffron into a powder and add also. Beat until uniform.
  3. Add in the powdered sugar and beat until light and fluffy.
  4. Add in the flour and beat until it comes together.
  5. Refrigerate until firm, roll it out and cut out rounds. Or roll into sausage shape and slice into rounds of about 1/4 inch thickness
  6. Preheat your oven to 180 C . Line a cookie sheet with parchment paper or grease it with butter.
  7. Place dough rounds about 2 inches apart
  8. Bake at 180 C for 18-20 minutes until edges are golden. Cool on a rack completely.
