Eggs veggie masala

Ingredients to make Eggs veggie masala

  • 2 eggs
  • One medium spring onion or two if small
  • One tomato medium
  • 1 capsicum small
  • 1tblspoon oil
  • I cube Cheese
  • Salt to taste little red chilli powder to sprinkle or a green chilli chopped
  • Pinch of garam masala
  • coriander leaves to garnish
  • Brown bread to accompany

How to make Eggs veggie masala

  1. Wash and chop onions, tomato, capsicum finely along with the stems of spring onions.
  2. Keep ready cheese in crumbles.
  3. Heat a non stick pan, grease with 1tablespoon of oil.
  4. Add onions with stem and green chilli (optional) saute and add tomatoes and capsicum chopped.
  5. Add salt and spices mentioned.
  6. Stir fry all for a minute, add the cheese crumble now and mix lightly.
  7. Spread mix well in pan and break eggs one after the other slowly on this veggies bed.
  8. Cover and slow cook for half a minute and turn off gas.
  9. Steam cooks a film on the eggs, remove lid sprinkle pepper and salt as required n garnish with coriander.
  10. Toast brown bread and slowly place together on two toasts or cut one portion each and place asap.
  11. Enjoy a wholesum breakfast or brunch

My Tip:

Do as required, dont let it stand for long as fresh look of eggs wil die. Do not over cook the eggs.
