ABOUT Eggless Coffee Flavour Rose Spritz Sandwich Cookies RECIPE

This homemade Coffee Flavour Rose Spritz Sandwich Cookies are lightly sweet and perfectly soft and creamy inside. The secret to this cookie is, instant coffee powder but no egg, no baking powder, no baking soda still it’s very easy to make, tasty, delicious and rich in flavour. These filled cream cookies are perfect with a hot cup of coffee or tea and perfect festival fancy cookies as a gift.

Ingredients Serving: 5

  1. For Cookies:
  2. 1 ¼ cup All-Purpose Flour
  3. ½ cup corn flour
  4. 1 cup Soft Butter (200 gm)
  5. 2/3 cup Powder Sugar (80 gm)
  6. ¼ cup Cocoa Powder
  7. 1 tsp vanilla extract
  8. 1 tsp Instant Dark Coffee Powder
  9. For Filling/Icing Cream:
  10. 1 cup Soft Butter
  11. 3 cup Confectioner Sugar
  12. 1 tsp vanilla extract
  13. Food Colour (as per you choice green, pink, yellow or red)
  14. Different Flavour Extract (mint, lemon, or rose)

Instructions

  1. For Cookies: Preheat an oven on 180C or 350F.
  2. Take ¼ cup warm water into the small cup, add instant coffee powder and mix it well till it is dissolved and keep aside.
  3. Add butter in a bowl, whisk it well, then add powder sugar, vanilla extract and mix it again till it is light and fluffy.
  4. Now add flour, corn flour, cocoa powder and mix it well. Then add the prepared coffee mixture and mix it well till smooth.
  5. Now fill the smooth mixture into the piping bag with rose tip mold and make the roses on baking sheet.
  6. Bake the all roses on 180C or 350F for 12-15 minutes.
  7. Remove all cookies on cooling rack and let it them cool down completely.
  8. For Filling: Add soft butter in a bowl, whisk it well then add powder sugar and mix it well till it is light and fluffy.
  9. Add vanilla extract, mix it well and keep into a fridge for ½ hour.
  10. Now divide it into 2-3 bowls, and add color and different flavor as per your choice.
  11. Process: Take the cookie, apply 1 tsp prepared cream on a cookie flat base and place another cookie flat surface on it.
  12. Follow same process for other cookies.
  13. Keep cookies aside till inside cream become stiff.
  14. Rose spritz sandwich cookies are ready, serve it or gift it.
