Suji Kakara

Ingredients to make Suji Kakara

  • Suji -- 2 cups
  • water -- 3 + ½ cups
  • sugar -- 1 cup
  • salt -- A pinch to taste
  • bay leaves -- 3 pcs
  • Atta (wheat flour) -- 1 tbsp
  • Green cardamom -- ¼ tsp powder
  • Ingredients :- for Stuffing 1. coconut Grated -- 3 cups
  • sugar -- ½ cup
  • Green cardamom -- ½ tsp powdered
  • Khoya -- 100 gms grated
  • raisins (Kaju/Kishmis) -- As per taste
  • ghee -- ¼ tsp

How to make Suji Kakara

  1. Preparation of the stuffing - Pour ghee in a pan. Fry the Raisins (Kaju/Kishmis) for one minute and take it out.
  2. Then fry the grated coconut in the same pan. Add Sugar, green cardamom powder to the pan. When it turns brownish in colour, mix the Khoya and the fried Raisins. Now let the mixture cool.
  3. For the Kakara- Boil 3 cups water. Mix the Atta (wheat flour) with ½ cup normal temperature water and pour it into the boiling water and stir it well.
  4. Add sugar, bay leaves and salt to water.
  5. Slowly pour the Suji, stirring continuously, so that lumps are not formed. Stir till the water dries up and let it cool.
  6. With wet hands, make small balls of the suji mixture and fill it with stuffing. Press carefully to flatten it, so that the sides does not open or cracked.
  7. Deep fry the flattened balls in refined oil. Serve hot.

My Tip:

Use a cup for pouring the suji slowly into the boiling water so that lumps are not formed.
