ABOUT Kaju Pista Roll RECIPE

My love for sweets is immense. So, I always try to prepare something new to satisfy my cravings. When I was a child, my mom's dessert range was limited to sheera and payasam. My dad usually bought sweets from sweet stores for any of the occasions. Even I used to follow the same until we moved abroad. The scenario here was different and we did not like the sweets that were available in freezer section of Indian stores. Then I started to brush up my cooking skills. So here is My Post Kaju Pista Roll. Love the texture and the way it turned out. Thank you for the amazing recipe Abha!

Ingredients Serving: 10

  1. 1 cup cashews
  2. 1 cup Pistachios
  3. 3/4 cup sweetened condensed milk
  4. 3 to 4 drops green food color (optional)
  5. 2 tsp clarified butter / ghee
  6. 2 tbsp milk powder
  7. 1/2 cup powdered sugar
  8. 10 to 12 saffron strands
  9. 1 tsp each cardomom powder and rose water

Instructions

  1. First, grind the cashews and pistachios (de-shelled) separately into a fine powder. Sieve them separately so that any lumps that are formed while grinding are broken. Now soak the saffron strands adding a tbsp of warm water.
  2. In a thick heavy bottomed pan add the ghee, condensed milk and powdered cashews. Mix well. Add milk powder and rose water and start cooking this mixture on a medium flame until it starts to leave the sides of the pan and forms a soft dough, keep stirring continuously to avoid any burning. This might take 10 to 12 minutes.
  3. Now turn off the flame and transfer this on to a plate to let it cool down a bit.
  4. Meanwhile, in a bowl take the powdered sugar and sieved pistachio powder along with it, cardamom powder, green food colour and make it into a soft dough using water (add water little by little). Do not over knead as it might start releasing oil.
  5. Start rolling. Take a rolling board and spread a cling film on it. You can stick it with cello tape on the sides for additional grip. Take a lemon sized cashew dough and cover it with cling film. Now roll it gently into an oval shape.
  6. Now take a portion of pistachios dough and make a cylindrical log out of it. Now, place this on the cashew dough and roll into a perfect log sealing the edges. Now similarly make logs with the remaining dough as well. I was able to make three logs.
  7. Now slice off the edges and cut these logs into 2 to 3 inch pieces. Kaju pista rolls are ready.
  8. Decorate the tops with saffron water.
