ABOUT Microwave Gajar ka Halwa RECIPE

I think I have mentioned earlier a couple of times that I love sweets but, this time it was my kid's request for Gajar ka halwa. Traditionally its made using mawa , gajar, sugar and lots and lots of ghee, not only that it is loaded with fat but is also very time consuming, But guess what, i made this in Microwave, in hardly 20 minutes using a tbsp of butter just to satisfy me mentally. Lol! It is my own version but, it is inspired from Showmethecurry.

Ingredients Serving: 6

  1. 500 gms carrots (peeled and grated) 
  2. 1 tbsp Butter / ghee
  3. 1/4 cup homemade/ store bought fresh Cream / Malai 
  4. 14 oz / 395 gms can condensed milk (you can use more/less according to your preference, the carrots I used were not that sweet so had to use whole can )
  5. Chopped nuts for garnish
  6. 1/2 tsp Cardamom powder

Instructions

  1. In a microwave safe deep bowl, preferrably glass bowl, add the grated carrots, cream and condensed milk.
  2. Use a deeper bowl, at times it might over flow. Initially add 3/4 sugar and check for its sweetness and add the rest if required.
  3. Give it a good stir and cook in the microwave on high for 5 minutes (My oven is 800 watts ) After which it will be all liquidy and carrots tend to soften a bit.
  4. Stir and cook on high for another 5 minutes.Repeat the process until all the liquid evaporates and dries up (It took exactly 18 minutes for me to attain the required texture).
  5. All the liquid had almost evaporated and the colour had changed to deep orange by then. Now add a tbsp of butter and microwave again on high for a minute.
  6. Later add the cardamom powder and stir. Gajar ka halwa is already. Garnish with chopped nuts and serve.
