Ingredients Serving: 3

  1. 1 cup basmati rice
  2. 2 cups thick coconut milk or 1 cup thick+ 1 cup thin coconut milk
  3. 1/4 teaspoon garam masala (optional)
  4. 1 teaspoon jeera
  5. 3-4 green cardamom
  6. 1 mace strand
  7. 7-8 peppercorns
  8. 4 cloves
  9. 1 bay leaf
  10. 1/2 onion thinly sliced
  11. 2 teaspoon ghee
  12. 1 teaspoon ginger garlic paste
  13. 1/2 carrot chopped
  14. 4-5 curry leaves chopped
  15. Salt to taste
  16. 1 small cinnamon stick
  17. 4-5 beans chopped
  18. 1/4 cup peas or chopped bell pepper
  19. Few coriander leaves chopped

Instructions

  1. Clean and soak rice for 30. minutes. Drain excess water and keep it aside
  2. Heat ghee in a vessel. Add bay leaf and whole spices. Roast until aromatic
  3. Add cashews and fry until golden brown
  4. Add onions and saute until tender
  5. Add ginger garlic paste and saute until raw aroma goes off
  6. Add chopped veggies and curry leaves. Saute for a minute
  7. Add coconut milk , coriander leaves and rice. Mix well.
  8. Add salt and garam masala. Mix and bring to boil
  9. Cover and cook on low heat for 15 minutes or until done
  10. Open lid, fluff rice. Serve with raita and curry
