Creamy vegetable rissotto

Ingredients to make Creamy vegetable rissotto

  • 1 cup basmati rice presoaked and boiled
  • 1 tbsp Butter
  • 1 small red, yellow and green bell peppers each chopped
  • 1 small sized onions chopped
  • 4 mushrooms chopped
  • 3 to 4 babycorn chopped
  • 1 tbsp of boiled sweet corn
  • 2 medium florets of chopped brocolli
  • 1 TBSP GARLIC PASTE
  • 2 tbsp processed amul and mozerella cheese mixed
  • 2 tbsp of cream
  • 1 cup milk
  • Salt to taste
  • 1 tsp black pepper powder
  • 2 tsp chilli flakes
  • 1/2 tsp mixed herbs
  • 1 tsp garlic powder(optional)
  • Shredded cheese for topping

How to make Creamy vegetable rissotto

  1. Soak 1 cup basmati rice in water for half an hour and boil it.Keep it aside.
  2. In a wide bottomed pan heat 1 tbsp butter.Add 1 tbsp of garlic paste and saute for a minute.
  3. Now add finely chopped onions.Fry for sometime and add all the bell peppers.
  4. Cook for sometime and then add chopped baby corns, mushrooms,sweet corn and broccoli.
  5. Fry well and add some salt at this point of time.Add a tsp of black pepper powder.
  6. Next add rice to the sauteed mixture and mash it continuously with a masher to achieve the creamy consistency.
  7. Once rice is incorporated with the veggies add 1 cup of milk in it.Add cheese.Mix well.
  8. Add chilli flakes and mixed herbs.Mix well and add cream.
  9. At this point add more milk if required to achieve the desired consistency.
  10. Adjust salt to taste.
  11. Take out the mixture in a baking dish and spread cheese over it..
  12. Bake in a pre heated oven at 200 c until the cheese gets crusty and brown.
  13. Serve with garlic bread or any bread of your choice
