Ingredients to make Begun Bhaja

  • I medium sized eggplant
  • 1 tbsp mustard oil
  • 2 tbsp gram flour
  • 1 tbsp red chilli powder
  • 1 tsp haldi powder
  • 1 tsp coriander powder
  • 1/2 tsp amchoor
  • salt to taste
  • 2 tbsp rice flour
  • 1 tsp grated garlic
  • 1 tsp green chilli finely chopped or as per taste.

How to make Begun Bhaja

  1. Slice the eggplant into medium thick roundels.
  2. Soak it in salt water for 15 mins and then wash thoroughly.
  3. Take the eggplant in a bowl.Add salt,red chilli powder,haldi powder,coriander powder,amchoor, gram flour,grated garlic,chopped green chillies and mustard oil.Mix well.Add little water if mixture too dry.
  4. Keep this mixture marinated for about half an hour.
  5. Heat a non stick pan.Spread oil on it.
  6. Coat the marinated eggplant in the rice flour from all sides.
  7. Shallow fry on hot tawa till golden brown on both sides.
  8. Serve it as a snack or serve it as an accompaniment with the main course.
