These cupcakes are hearty, healthy and lip smacking.

Eggless "Fruit-Heart" Breakfast Cupcakes

Ingredients to make Eggless "Fruit-Heart" Breakfast Cupcakes

  • 1 cup all purpose flour
  • 1/2 cup wholemeal flour
  • 1/2 cup oats
  • 1 cup raw brown sugar
  • 1 cup olive oil
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 2 tablespoon milk+ 1 tablespoon vinegar
  • 1 golden kiwi fruit crushed or pureed
  • 1 medium mango pureed
  • 4 tablespoon melted dark chocolate and crushed walnuts for icing
  • Little hearts - optional

How to make Eggless "Fruit-Heart" Breakfast Cupcakes

  1. Preheat the oven to 150 D Celsius for 10 minutes. Mix all the dry ingredients in a bowl and sieve twice.
  2. Add all the wet ingredients and mix them with an electric mixture until smooth and creamy.
  3. Mix the wet ingredients to dry ingredients in two parts and fold gently. Mix until everything is well incorporated.
  4. Grease muffin liners and fill them halfway with batter. Bake until a skewer inserted comes out clean.
  5. Once cooled. Melt some chocolate a spread a little on top. Sprinkle some crushed walnuts and top it up with a heart.

My Tip:

Mango can be replaced with beetroot, pineapple, apple, pear, apricot and banana. Try out all flavors.
