Ingredients Serving: 8

  1. 2 cups All purpose flour
  2. 1/2 teaspoon baking soda
  3. 1/2 teaspoon baking powder
  4. a pinch Salt
  5. 1.5 cups shredded coconut
  6. 1 cup Butter
  7. 5 teaspoon milk
  8. For Filling
  9. 1/2 cup finely chopped pistachios
  10. 1/2 cup finely chopped walnut
  11. 1/4 cup finely chopped dates
  12. 2 teaspoon coconut powder
  13. 2 teaspoon icing sugar

Instructions

  1. Assemble dry ingredients. Flour, baking soda, salt and baking powder.
  2. Sift dry ingredients together. Set aside.
  3. In a mixing bowl, add butter and sugar. Preheat the oven to 180 degrees.
  4. Cream sugar and butter together. Add desiccated coconut, flour, Vanilla essence and milk.
  5. Mix until it forms a soft dough. The dough should not be sticky or runny.
  6. Shape as logs. Wrap cookie dough in a plastic wrap and chill in the refrigerator for 30 minutes as the dough performs best when chilled.
  7. Grease a baking tray.
  8. Take chilled dough logs out of the refrigerator and cut in the desired shape.
  9. Meanwhile mix all ingredients for filling.
  10. Take one piece from dough and stuff with prepared filling, again press it.
  11. Make all cookies like this way. Or you can give shape through cookie cutter.
  12. Start arranging the cookies on the greased baking sheet.
  13. Bake at 180 c degrees for 15-20 minutes.
  14. When done ,take out from oven and let it rest till room temperature.
  15. Sprinkle some icing sugar. (one batch takes 15 to 20 minutes, I kept in three batches, so it took all over 50 - 55 minutes )
