ABOUT Tempered Cauliflower Rice RECIPE

There are so many ways you can use this tempered cauliflower rice. Have it as the main dish (like I did) with a side of pickle, papads and salad or you could make a Buddha bowl with chickpeas and an assortment of veggies. It is great as a filling for burritos replacing the lime rice or a nice accompaniment to your steaks (hugely cuts down the guilt factor!).

Ingredients Serving: 3

  1. 2 tsp Ghee/clarified butter
  2. 1 tbsp sesame Oil
  3. 1 tbsp raw Cashewnuts
  4. 1 tbsp raw Peanuts
  5. 1 tsp Mustard seeds
  6. 2 sprigs Curry leaves
  7. 3 dry Red chilli
  8. 1 green Chilli slit in half
  9. ½ tsp Turmeric powder
  10. Asafoetida/hing a pinch
  11. Juice of 1 lemon
  12. Salt to season
  13. 1 whole Cauliflower; separated into large florets
  14. 2 tsp Ghee/clarified butter
  15. 1 tbsp sesame Oil
  16. 1 tbsp raw Cashewnuts
  17. 1 tbsp raw Peanuts
  18. 1 tsp Mustard seeds
  19. 2 sprigs Curry leaves
  20. 3 dry Red chilli
  21. 1 green Chilli slit in half
  22. tsp Turmeric powder
  23. Asafoetida/hing a pinch
  24. Juice of 1 lemon
  25. Salt to season

Instructions

  1. Thoroughly wash florets and pat dry. You can grate cauliflower or if you have food processor, blitz cauliflower until grainy.
  2. In a deep pan, heat oil and separately roast cashew nuts and peanuts. Drain and set aside.
  3. In the same pan, add mustard seeds and when they start to crackle add curry leaves and dry red chili.
  4. Reduce the flame and add in green chili, turmeric powder, asafoetida along with blitzed cauliflower.
  5. Taste for salt and squeeze over juice from ½ a lemon. Combine well and on high flame toss for a minute or two. Turn off the flame and serve warm by adding more lemon juice if required.
