Tempered Cauliflower Rice

Ingredients

  • 2 tsp Ghee/clarified butter
  • 1 tbsp sesame Oil
  • 1 tbsp raw Cashewnuts
  • 1 tbsp raw Peanuts
  • 1 tsp Mustard seeds
  • 2 sprigs Curry leaves
  • 3 dry Red chilli
  • 1 green Chilli slit in half
  • ½ tsp Turmeric powder
  • Asafoetida/hing a pinch
  • Juice of 1 lemon
  • Salt to season
  • 1 whole Cauliflower; separated into large florets
  • 2 tsp Ghee/clarified butter
  • 1 tbsp sesame Oil
  • 1 tbsp raw Cashewnuts
  • 1 tbsp raw Peanuts
  • 1 tsp Mustard seeds
  • 2 sprigs Curry leaves
  • 3 dry Red chilli
  • 1 green Chilli slit in half
  • tsp Turmeric powder
  • Asafoetida/hing a pinch
  • Juice of 1 lemon
  • Salt to season

Steps

  1. Thoroughly wash florets and pat dry. You can grate cauliflower or if you have food processor, blitz cauliflower until grainy.
  2. In a deep pan, heat oil and separately roast cashew nuts and peanuts. Drain and set aside.
  3. In the same pan, add mustard seeds and when they start to crackle add curry leaves and dry red chili.
  4. Reduce the flame and add in green chili, turmeric powder, asafoetida along with blitzed cauliflower.
  5. Taste for salt and squeeze over juice from ½ a lemon. Combine well and on high flame toss for a minute or two. Turn off the flame and serve warm by adding more lemon juice if required.
