ABOUT Almond Coco Hats with sweet carrot sauce RECIPE

A delightful dessert is perfect on dusky evenings! The hats are crispy outside and chewy inside. As these look like hats I named the dessert as Almond Coco Hats. You can have these delicious almond coco hats with sweet carrot sauce. It can also be served as an after school snack for kids instead of those junk foods

Ingredients Serving: 4

  1. For stuff : Coconut , dry- 1 cup
  2. Almond, powdered – 1/4 cup
  3. Sugar powder – 1 cup
  4. Cinnamon powder – 1/4 teaspoon
  5. For Outer Layer - All purpose flour – 1 cup
  6. Vegetable ghee { or Dalda } – 1.5 cups
  7. Pinch of salt
  8. Sugar powder – 1/2 cup,
  9. Natural food color (yellow) – optional
  10. For Sweet Carrot Sauce - Carrots – 2
  11. Vegetable ghee – 3 tablespoons
  12. Cinnamon powder – 1 pinch.
  13. Dates/Khajoor – 1/2 cup.

Instructions

  1. In a large bowl, add all purpose flour, salt and sugar powder. Mix well. Slowly pour the luke warm vegetable ghee to it. Rub it well with the help of your fingers so as to form a dough of medium consistency – neither tight nor very soft.
  2. Cover with plastic wrap or kitchen towel and set aside.
  3. In the meanwhile, dry roast the coconut for a minute. Just warm it until aromatic. Transfer it to a dry bowl.
  4. Add the powdered almond, sugar powder,cinnamon powder to it. Combine well and set aside.
  5. Now pinch a small piece of the dough. Mould it into desired shapes and fill it with the powdered nut-mix /stuff. Carefully close the other end. If needed apply vegetable ghee to stick the ends properly.
  6. You can also mould them as shown in the below image.
  7. Place these onto a butter paper. Bake the hats in convection mode for 15minutes at 160°C or until the outer layer turns light brown.
  8. Preparation of Sweet Carrot Sauce : In the meanwhile, heat a pan. Add vegetable ghee and grated carrot to it. Fry until the raw smell goes off.
  9. Then add dates paste,cinnamon powder to it. Stir it well over a low to medium flame for 2 minutes. The sauce should not be too little thick or too thin in consistency. Pour water only if required ( based on the consistency ).
  10. Carefully take out the baked hats from the oven and place them on a serving plate. Serve the scrumptious “Almond – Coco- Hats “ with sweet carrot sauce.
