Ingredients Serving: 6

  1. Finger Millet flour - Ragi ½ cup
  2. All purpose flour 1 cup
  3. Cocoa powder 1 tbsp.
  4. light brown sugar 1 cup
  5. Baking soda 1/2 tsp
  6. apple cider vinegar 1 tsp
  7. Baking Powder 1 Tsp
  8. vegetable oil 1/4 cup
  9. curd/yogurt 1/4 cup
  10. Milk 1/4 cup
  11. Vanilla essence 1 tsp
  12. grated carrot 1/2 cup
  13. Grated bottle gourd 1/2 cup
  14. M&M's for topping

Instructions

  1. Sift the finger millet flour, all purpose flour, baking powder and cocoa powder twice in a large vessel. Mix grated carrot.
  2. Take another vessel and add curd, oil, milk and sugar in it, beat the liquid mixture with a fork till the sugar is dissolved. Then mix bottle gourd.
  3. Preheat the oven to 190°C for about 10 minutes. Grease a muffin mould or a round cake tin with oil.
  4. Add the dry ingredients to the wet liquid mixture little by little and fold lightly making circular motions.
  5. Sprinkle soda on vinegar and mix quickly into the batter, by doing this your cake will be soft and moist.
  6. Pour the cake batter into the greased cake tin And top with M&M’s and bake for 30 minutes or till the cake is done. Check the cake by inserting a clean knife in it, if it comes out clean the cake is fully baked.
  7. Dust the cake with powder sugar and enjoy the chocolaty treat.
