Eggless Mango Muffins

Ingredients to make Eggless Mango Muffins

  • Maida 120 gm
  • Curd 1 tbsp
  • Mango juice 3/4 cup
  • Small mango pieces 2 tbsp
  • Tutty fruity 2 tbsp
  • Caster sugar 1/2 cup
  • Baking soda 1/4 tsp
  • Baking Powder 1 Tsp
  • Olive oil 1/8 cup
  • Vanilla or mango essence 1/2 tsp

How to make Eggless Mango Muffins

  1. Sieve maida, baking powder, baking soda in a bowl.
  2. Preheat the oven for 180 degrees celsius.
  3. Grease the mould and keep it ready.
  4. Add sugar and mix it well, now add mango juice, curd, olive oil, essence, mango pieces and fold.
  5. Do not over mix, only the flour needs to get wet.
  6. Add tutty fruity and give a quick stir.
  7. Pour the batter in cups and bake at the same temperature for 20 minutes.
My Tip: You can use mango drink instead of fresh mango juice if mangoes are not available.
