A healthy eggplant dish.

Baked Eggplant

Ingredients to make Baked Eggplant

  • egg plant three medium size
  • Roasted cumin seeds half tsp
  • Roasted coriander one tsp
  • Roasted fennel half tsp
  • Roasted fenugreek half tsp
  • onion seeds one tsp
  • red chilli powder one tsp
  • Asfoetida half tsp
  • mango powder half tsp
  • oil as required
  • salt to taste
  • Pinch of sugar

How to make Baked Eggplant

  1. Cut into half pieces lengthwise.
  2. Add oil in a heated pan and fry the plant half done with salt and turmeric.
  3. All spices should be half dust and stir with oil, mango powder, asafoetida, salt, red chilli and sugar.
  4. Now stuff spices inside the eggplant and tie it with a thread.
  5. Add oil and fry from both sides or bake in a preheated oven.
  6. Cut thread before serving.

what is half dust? and should the eggplant be deep fried?
