ABOUT Coconut mousse in crisp coconut basket RECIPE

This recipe has different layers of texture . First crisp coconut katori , then velvety mousse filled with coconut jelly

Ingredients Serving: 4

  1. For coconut mousse
  2. 2 egg yolk
  3. 125 ml coconut milk
  4. 1 1/2 tsp agar agar
  5. 2 tbsp.sugar
  6. 1 cup whipped cream
  7. For coconut jelly
  8. 1/2 cup coconut water or third extract of coconut (coconut milk)
  9. 2 tbsp sugar
  10. 3/4 tsp agar agar
  11. For coconut crisp .katori.
  12. 50 gm butter
  13. 55 gm light brown sugar
  14. 21/2 tbsp corn syrup
  15. 6 tbsp flour
  16. 2 +2 tbsp coconut flakes
  17. 1 tsp lemon juice

Instructions

  1. For coconut jelly heat coconut water sugar in a.pan.
  2. To this.add agar agar
  3. Fill this in silicon mould and let it set
  4. For mousse .
  5. In a sauce pan mix egg yolk and sugar well .
  6. To this add coconut milk and mix well.
  7. Heat this mixture on.low flame till it starts thickening.
  8. Add agar agar to it and let it cool.
  9. Now fold whip cream in this mixture.
  10. Now fill half silicon mould with this mousse.
  11. Insert set coconut jelly in this and cover it completely with coconut mousse.
  12. Let it set overnight .
  13. For crisp coconut katori
  14. Heat butter,brown.sugar and corn syrup till sugar dissolves. Then add lemon juice and mix .
  15. Now add flour to this and mix well.
  16. Then add half coconut flakes and mix well
  17. Now place 1 tbsp of this mixture on lined baking tin .Sprinkle coconut flakes on it .
  18. Bake this in.a.preheaed oven at 180 degree for.10-.12 mins till it spread thin and becomes of light brown colour .
  19. Place this disc on back of katori to give it katori shape before it cools down and become stiff.
  20. Now place set coconut mousse with coconut jelly in this katori. Garnish with some fresh coconut and chocolate curls and serve chilled
