Cupcakes and butter go hand in hand, so here is a delicious vanilla cupcake with tangy lemon frosting.

Ingredients Serving: 10

  1. Maida flour - 1.5 cups
  2. Sugar - 1 cup
  3. Baking powder - 1.5 tsp
  4. Salt - 1/4 th tsp
  5. Butter - 1/2 cup
  6. Egg - 1
  7. Egg yolks - 2
  8. Vanilla extract - 1.5 tsp
  9. Yoghurt - 1/2 cup
  10. For the lemon frosting :
  11. Unsalted Butter - 1/2 cup
  12. Icing sugar - 2 cup
  13. Lemon extract - 1 tsp
  14. Cream - 3 tbsp
  15. Yellow gel color

Instructions

  1. Whisk the soft butter with sugar until fluffy.Then add the egg and egg yolks one by one while whisking.
  2. Then add the vanilla extract and whisk again.
  3. Sieve the flour, baking powder and salt together. Now fold in the yoghurt and the flour mix into the egg mixture, in 2 parts. Mix until everything is combined.
  4. Pour them into cupcake tray lined with muffin liners. Bake them at 170 ℃ for 20-25 minutes. Cool..
  5. For the frosting, Whisk the butter until fluffy. Then add the icing sugar and whisk well.
  6. Then add the lemon extract and mix well. Then add the cream and mix well.
  7. Mix in the gel color. Pour this into a piping bag with a nozzle and pipe the cupcakes.
