Eggless Orange Cake

Ingredients to make Eggless Orange Cake

  • 230 grams all purpose flour
  • 3 oranges/kinnow
  • 210 grams caster sugar
  • 6-8 tablespoons oil
  • 1/4 teaspoon salt
  • 2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon lemon juice
  • 1/3 cup thick curd
  • butter for greasing

How to make Eggless Orange Cake

  1. Grease your cake tin with some butter and sprinkle some flour over it. Preheat your oven to 170C.
  2. Using a fine grater, grate the orange part of oranges to get the zest. You should have around 1 teaspoon orange zest. Squeeze out 1/2 cup juice from the oranges.
  3. In a big mixing bowl, sift together flour, baking powder, baking soda and salt. Mix well.
  4. Add caster sugar and mix.
  5. Form 3 wells in the dry mixture. Add curd to one, orange juice to the second and oil to the third. Add orange zest and mix everything together very well.
  6. Add 1-2 tablespoons of water to make a thick but pouring batter. Pour batter into prepared cake tin and bake at 170C for 35 minutes.
  7. After 35 minutes, check by inserting a toothpick or a knife in the cake. If it comes out clean, then it's done else bake it for 5 minutes more.

My Tip:

Zest out only orange part of the orange skin. Do not grate white part as it will make the cake bitter.
