Ingredients Serving: 10

  1. Wheat flour - 3/4 cup
  2. Sorghum / Jowar/ Jolada flour - 1/2 cup
  3. Finger millet /Ragi flour - 1/4 cup
  4. Oil - 4-5 tbsp
  5. White sesame seeds / Til - 2 tbsp
  6. Flax seeds / agase beeja - 2 tbsp
  7. Green Chillies - 3-5 ; finely chopped
  8. Coriander leaves - handful ; finely chopped
  9. Curry leaves few ; finely chopped
  10. Water - around 1/2 cup
  11. Salt to taste

Instructions

  1. Slightly roast white sesame seeds till they start cracking . Roast flax seeds. Roast till the popping sound reduces. Transfer the flax seeds to a separate plate.
  2. Powder flax seeds once they are nicely cooled . To a big mixing bowl add all flours , roasted sesame seeds , powdered flax, salt and chopped chilli - coriander - curry leaves .
  3. Add oil and mix everything nicely with your finger tips to form bread crumb like texture . Next , to that add water in steps , combine everything together to form a dough .
  4. Allow the dough to rest for 15 to 30 minutes. Preheat the oven at 180 deg C for 8-10 mins. Divide the dough into two equal portions.
  5. Dust the slab and roll each portion into a big circle thicker than the roti. While rolling edges may break. Try sealing them with your fingers and roll . Using a cookie cutter or any lid cut them into your desired shape and size.
  6. Slowly lift them and arrange them on a baking tray lined with parchment paper sheet and bake it for around 15- 25 mins at 160 deg C. Keep an eye after 15 mins . Remove them if you see the edges turning red in colour .
  7. Once done, place them on a cooling rack to cool . They become crispier once they cool down.
