Kaju katli(kaju ki barfi)

Ingredients to make Kaju katli(kaju ki barfi)

  • 1 cup cashews
  • 1 cup powdered sugar
  • 1/2 teaspoon green cardamom powder
  • 1 tablespoon ghee
  • silver varq 4-5 sheets

How to make Kaju katli(kaju ki barfi)

  1. Soak cashews in water for 30 mins and grind to a very fine paste using only about 2-3 tbsp water.
  2. Take a heavy non stick pan and heat over low flame, add ghee, cashew paste and powdered sugar to it. Mix well.
  3. Continue heating the mixture over low flame whilst stirring continuously. Add cardamom powder and mix well.
  4. Keep stirring till the mixture thickens and forms a ball(about 8-10 minutes).Switch off flame and let the mixture cool for a while.
  5. Once the mixture is warm is warm to the touch, knead it into a very soft dough.But if the dough seems dry, add 1 tablespoon of milk into it.
  6. Roll the dough into 1/4 inch thick circles with a greased rolling pin and cut out into the shape of a diamond with a sharp knife.
  7. Spread silver varq on the barfi and let cool for 10 minutes.Serve.
My Tip: The trick is to grind the paste very fine. Kaju barfi stays good for two weeks, refrigerated.
