ABOUT Chicken Meatloaf with Roast potatoes. RECIPE

An easy almost one dish meal that takes minutes to put together and pop in the oven.

Ingredients Serving: 4

  1. Chicken mince 500g
  2. Chopped carrots 100g
  3. Finely chopped onion 150g
  4. Finely chopped bell peppers 150 g
  5. 1 tbsp crushed garlic
  6. Dry bread crumbs 100g
  7. One egg
  8. 1 tbsp oil
  9. Worcestershire Sauce 2 tbsp
  10. 1/2 tsp dried thyme
  11. 50g shredded sharp cheese like Gouda or cheddar
  12. 2 tbsp fresh or 1 tsp dried parsley
  13. For the potatoes:
  14. Potatoes 750g half boiled and cut in two
  15. Olive 2 tbsp
  16. Salt and pepper to taste
  17. Rosemary 1 tsp

Instructions

  1. Heat oil in pan.
  2. Lightly sauté the carrots, onions, and garlic till soft and golden , set aside to cool.
  3. In a bowl mix all the other ingredients for the meatloaf and last mix In the sautéed vegetables.
  4. Transfer to a greased loaf tin and refrigerate till needed.
  5. Bake in a preheated oven at 200C for an hour.
  6. Cool slightly and unmould.
  7. For potatoes:
  8. Toss the potatoes, Rosemary, salt snd pepper tricot them well
  9. Bake at 200C for stleat 40-45 mins
  10. Serve hot.
