Ingredients Serving: 4

  1. 250g prawns
  2. For Marination
  3. 1 tbsp red chilli powder adjust
  4. 1 teaspoon biryani masala
  5. 1 green chillies finely chopped
  6. Salt to taste
  7. 1/2 teaspoon turmeric
  8. 1 teaspoon ginger garlic paste
  9. 1/2 teaspoon lemon juice
  10. 1 tbsp chopped mint leaves
  11. 170g yoghurt
  12. FOR BIRYANI
  13. 1 cup Basmati Rice
  14. 2 green cardamom
  15. 2 cloves
  16. 1 teaspoon shahi jeera
  17. 1 black stone flower
  18. 1 inch cinnamon stick
  19. 1 teaspoon melted butter
  20. Salt to taste
  21. FOR GARNISH
  22. 2 onions thinly sliced
  23. 5 tbsp butter + additional for greasing
  24. 2 tbsp chopped mint leaves
  25. 3 tbsp saffron milk
  26. 1/2 teaspoon biryani masala

Instructions

  1. Fry onions in butter until caramelized. Keep it aside
  2. Clean and soak rice for 30 minutes. Drain excess water and keep it aside
  3. In a bowl, mix all ingredients mentioned under Marination section with 1/4th of fried onions
  4. Add prawns and marinate for 30 minutes
  5. In a small cloth, add whole spices and tie it
  6. Boil enough water with salt and melted butter
  7. Add whole spices pouch and rice. Cook until 50 percentage done. Drain excess water and remove spice pouch
  8. In a thick bottom vessel, add butter and grease well or use any leftover butter from fried onions pan
  9. Add prawns with Marination and spread evenly
  10. Add rice on top and spread evenly. Add remaining fried onions, mint leaves on top. Sprinkle saffron milk and biryani masala on top
  11. Cover with foil. Shut tightly with lid
  12. Cover and cook on medium heat for 10 minutes and then on low heat for 10-12 minutes. Switch off
  13. Rest for 20 minutes. Open lid, fluff and serve with raita or curry
