ABOUT Mango and Sago Pudding RECIPE

A cold treat with just 3 main ingredients and a perfect way to enjoy the mango season.

Ingredients Serving: 4

  1. 1 and 1/2 cups Pureed mangoes
  2. 4-6 tbsps Sugar
  3. 3 tbsps Powdered sago
  4. 1/4 cup water
  5. 1 tsp Vanilla extract [optional]

Instructions

  1. Soak the powdered sago in 1/4 cup of water for 3-4 hours.
  2. Grind the soaked sago in an electric mixer and pass through a sieve. You would be left with a milky liquid.
  3. Cook the milky liquid on a low flame and while stirring continuously, until it turns translucent and glassy in appearance.
  4. Blend it with the mango puree and sugar. Add the vanilla extract [ I prefer adding it because it masks the distinct flavour of sago]
  5. Pour it into individual ramekins / tart moulds [I prefer the tart moulds as the pudding sets better and faster in these]
  6. Pre heat the oven at 180 degrees for 10 minutes.
  7. Place the ramekins in a large baking tray. Fill the tray with boiling water such that the ramekins are half immersed in it.
  8. Bake in the pre heated oven at 180 degrees for 30 minutes. [alternatively you may use the double boiler method and make this on the stove]
  9. Allow to cool and place in the freezer for 45 minutes to 1 hour until the pudding just sets.
  10. Invert onto a serving plate , garnish with fresh mint leaves and serve.
