ABOUT Roasted Lemon Herbed Chicken RECIPE

Ingredients Serving: 5

  1. 10 Chicken drumsticks
  2. 1 red bell pepper sliced
  3. 1 yellow bell pepper sliced
  4. 1 head broccoli
  5. 1 bunch asparagus
  6. For Marinade:
  7. 2 tbsp melted butter
  8. 2 tbsp olive oil
  9. 4 chopped garlic cloves
  10. 1 tsp onion powder
  11. 1 tsp paprika
  12. 1 tsp parsley
  13. 1/2 tsp dried thyme
  14. 1 tbsp lime juice
  15. Salt and pepper to taste
  16. For White sauce:
  17. 1 tbsp butter
  18. 1/2 cup full cream
  19. 4 tbsp mozzarella cheese
  20. 1/4 cup chicken broth
  21. 2 tbsp cream cheese
  22. 1/2 tsp garlic powder
  23. 1/2 tsp onion powder
  24. Salt and pepper to taste

Instructions

  1. Clean chicken, wash and drain thoroughly. Pat dry the drumsticks.
  2. Wash veggies and slice them as desired (keep the broccoli florets intact).
  3. Prepare the marinade and divide it equally to apply to chicken and veggies.
  4. Marinate chicken in refrigerator for 30 minutes.
  5. Meanwhile, Preheat oven to 425 Deg F/200 Deg C.
  6. Line a baking tray with parchment paper.
  7. Spread the veggies flat on the tray with chicken pieces on top of them.
  8. Bake for 45 minutes or till chicken is no longer pink from inside.
  9. To prepare the sauce:
  10. Heat nonstick pan with butter.
  11. As soon as butter melts, add the broth, cream, cream cheese, mozzarella cheese. Stir well till well blended and no lumps are seen.
  12. Add onion powder, garlic powder, salt, pepper, lime zest, parsley, and thyme. Simmer for few minutes till it thickens a bit.
  13. Serve chicken & veggies with the sauce drizzled over it.
