PANCAKE WITH BLUEBERRY SAUCE

Ingredients to make PANCAKE WITH BLUEBERRY SAUCE

  • For Pancake: 1 1/2 cups maida
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp melted butter
  • For Blueberry sauce: 1 cup Blueberries
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 tbsp fresh lemon juice
  • 1 tbsp butter

How to make PANCAKE WITH BLUEBERRY SAUCE

  1. In a bowl, add flour, sugar, salt, and baking powder.
  2. In another bowl add milk and egg mix together.
  3. Create a well in the centre of the flour mixture.
  4. Pour the butter and milk mixture into the well.
  5. With help of whisk mix everything together. Keep the batter to rest for 30 minutes.
  6. Heat a non stick pan over medium heat, put little oil on the pan and pour the batter onto the pan. Cook each side for 3-6 minutes, until lightly golden brown.
  7. To make blueberry sauce mix all ingredients in a small saucepan. Bring mixture to a boil. Reduce heat to medium-low; gently boil 10 minutes or until sauce thickens. Stir in butter.
  8. For serving: stack the pancakes drizzle the blueberry sauce and top with butter.

My Tip:

You serve with maple syrup as well as honey.
