ABOUT Ukadiche Modak RECIPE

Ganesh Chaturthi is a major festival in south Indian states like Andhra, Karnataka, Tamilnadu and also in Maharashtra. The first and foremost thing that comes in mind if we talk about this festival is Modak which is Lord Ganesha's favorite. Ukadiche modak is one of the most popular modak variety made during ganesh chaturthi festival in Maharashtra.

Ingredients Serving: 8

  1. 2 cups rice flour
  2. 1 1/4 cups water
  3. 1/2 tsp sugar
  4. ĵ tsp ghee
  5. A pinch of salt
  6. 2 cups fresh grated coconut
  7. 1 1/4 cup grated jaggery
  8. 1 tbsp Poppy seeds
  9. 1 tbsp sesame seeds
  10. 1 tsp ghee
  11. 1 tsp rice flour
  12. ĵ tsp cardamom powder
  13. a pinch of nutmeg powder
  14. finely chopped nuts

Instructions

  1. Dry roast the poppy seeds and sesame seeds in a kadai or a pan.
  2. Heat a deep pan (non-stick), add jaggery and cook over low heat till the jaggery melts, while stirring continuously.
  3. Add coconut, poppy seeds, sesame seeds, cardamom powder and nutmeg powder. Saute for a minute.
  4. Mix well and cook this mixture till the moisture from the jaggery begins to dry.
  5. Add a bit of rice flour to this mixture (this helps to absorb moisture from the filling, if any). Add nuts and mix well.
  6. Remove from heat and keep the mixture aside.
  7. Heat a deep pan. Add 1 & 3/4 cup of water, ghee, salt and sugar. Bring it to a boil.
  8. Reduce the flame and add the rice flour gradually. Stiring continously.
  9. Stir till all the rice flour is mixed with the water. Remove from heat and cover with a lid for 10 minutes.
  10. Now take the dough and knead it till well combined.
  11. Before you start shaping the modaks, keep water for steaming in a pan.
  12. Grease the modak mold with ghee. Add the dough to it and form the shape. Fill the stuffing and close. Bring the modak out of the mould.
  13. Once all the modaks are done, place them in the steamer decks, which is lined with muslin cloth. Steam for 15- 20 minutes on a medium flame.
  14. When the ukadiche modaks are steamed, drizzle a few teaspoons of ghee on the modaks.
