Potato Rositi or Roschiti or Rosti is a Swiss dish consisting mainly of potatoes.It used to be the main breakfast dish of farmers .But now it is served as a side dish of any given meal.Its taste is so ravishing that everybody would like to have it.Butter and herbs in this dish make it more versatile. Number of additional ingredients such as cheese,spring onion even apples are added to this dish. It makes a complete one time meal if it is served with mushroom sauce and tangy and sweet honey glazed carrots.

Ingredients Serving: 2

  1. For Mushroom Sauce
  2. Fresh button mushrooms 10 in numbers
  3. Whole wheat flour 1 tsp
  4. Butter 1 tbsp
  5. Onion 1 chopped fine
  6. Garlic 4 chopped or crushed
  7. Black pepper powder 1/2 tsp
  8. Salt 1/2 tsp
  9. Vinegar 1 tsp
  10. Cream 1 tbsp
  11. For Glazed carrot
  12. Carrot 2
  13. Butter 1 tbsp
  14. Black pepper 1/2 tsp
  15. Honey 1 tbsp
  16. Lime Juice 1 tsp
  17. salt 1/4 tsp
  18. For potato Rositi
  19. Large golden potatoes 5-6
  20. carrot 1 grated
  21. Cornflour 1 tsp
  22. Butter 3 tbsp
  23. Black pepper powder 1/2 tsp
  24. Mint paste 1 tbsp
  25. cheese 4 tsp
  26. Salt 1/2 tsp
  27. Cream 1 tbsp
  28. Salt 1/2 tsp
  29. Spring onion (green )1 chopped fine to garnish

Instructions

  1. First of all prepare the mushroom pepper sauce.
  2. Wash mushrooms properly and one by one.Wipe them clean. Chop mushrooms ,onion and garlic finely.
  3. Heat butter in a pan.Add onion.Saute them for 5 minutes till transluscent.Add garlic.Saute again. When butter is infused in onion and garlic aroma starts coming.
  4. It's time to add flour and stir it till brown in colour.Add mushrooms.Cook them on a medium heat.Sprinkle 6-7 drops of water if mushrooms are sticking.Cook well.Add 1 cup of water.Stir well.Add black pepper and salt.Sauce will be thick now.
  5. Add 1 cup water and cook very well for 5 minutes.
  6. Add cream and vinegar.Mix well. Buttery mushroom sauce is ready. .Keep it aside.
  7. Prepare glazed carrots.
  8. Heat butter in a wok.Add juliens of carrot.Stir and saute them.Add salt.when it is half done and still crunchy switch off the gas.
  9. Add honey and lime juice .Mix well. Keep honey glazed carrots aside for further use.
  10. For Potato Roisti...
  11. Parboil potatoes in a open kadhai for 5 minutes.Peel them.
  12. Grate in a large holed grater.
  13. Add 1 tbsp butter, cheese,cornflour,grated carrot,black pepper,mint paste and salt in the grated potatoes.Mix with the help of two forks in both hands. Divide the mixture into two parts.
  14. Heat the heavy bottomed non stick griddle.First of all spread the cheese on the griddle and immediately spread the one part of the potato mixture. Secure the edges of the potato mixture .Blot the edges and top with the remaining butter.

  16. Flip the Rositi.
  17. Cover it with a plate and let it cook for 10 minutes on slow flame.
  18. Carefully remove the cover plate and flip the rositi.
  19. Potatoes become tender in the centre.Cook for another 5 minutes on medium heat till it becomes golden brown in colour.Make another rositi in the same manner.
  20. Take it out in a serving plate.Top it with mushroom pepper sauce and glazed carrots. Sprinkle some chopped spring onion also.
  21. Cut in to wedges if desired.Serve this amazing tasteful rositi hot.
