Mango CheeseCake Parfait

Ingredients to make Mango CheeseCake Parfait

  • 2.5 cups Crushed Cookies crumbs (I used assorted Chocolate cookies)
  • 2 tbsps Melted butter
  • 2.5 cups Fresh Alphonso Mango Pulp (Try to use only pulp, extra liquid from mango might make the mixture runny)
  • 250 gms Cream cheese
  • 1/4 cup Sweetened Condensed Milk
  • 1/2 cup Heavy Whipping Cream
  • 3-4 tbsps Super fine Sugar(Adjust as per preference)
  • 1 cups Firm Mango Chopped into small chunks

How to make Mango CheeseCake Parfait

  1. Mix well Cookie crumbs and melted butter.
  2. Spoon 2.5 tablespoons of mixture into the serving glass. Press lightly with hands.
  3. In a food processor puree the mango pulp.
  4. In a big mixing bowl add cream cheese, heavy whipping cream, sugar and sweetened condensed milk. Whip on high speed for 2-3 minutes.
  5. Add in the mango puree and whip until well incorporated. (The mixture might look little it will set when chilled)
  6. Fold in half of mango chunks into the mixture using a spatula.Divide the mixture among the serving glasses equally
  7. Spoon remaining cookie crumb equally among all the glasses.
  8. Chill overnight or at least for 6 hours.
  9. Just before serving top with fresh cut mango chunks.
