Pomegranate and Vanilla Panna Cotta

Ingredients to make Pomegranate and Vanilla Panna Cotta

  • 2 cups whipping cream
  • 1 cup milk
  • 1/3 -1/2 cup sugar
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 2 tsp agar agar powder (or 2tbsp agar agar flakes)
  • 2 cups fresh pomegranate juice
  • 2 tbsp cornflour (corn starch)
  • 1 tsp Lemon juice
  • 2-4 tbsp sugar if juice is not sweet
  • 6 tbsp pomegranate seeds (arils)

How to make Pomegranate and Vanilla Panna Cotta

  1. Heat the milk and add agar agar. Leave the mixture on the side for 20 minutes for the agar agar to soak.
  2. Add cream and sugar to the milk agar agar mixture. Mix well. Heat the mixture over medium heat till the agar agar melts.
  3. Take the pan off the heat. Add lemon zest and vanilla extract. Mix and let the mixture cool.
  4. Pour the mixture into 6 individual serving glasses or bowls. Put the containers in the fridge for the panna cotta to set. This will take about 2 hours.
  5. To prepare the pomegranate layer, mix the juice , sugar if using any and cornflour in a pan.
  6. Heat the mixture over low heat ans stir constantly till it thickens. Let the mixture cool.
  7. Pour the pomegranate mixture over the panna cotta. Put it in the fridge for further 2 hours for the layer to set.
  8. Top with pomegranate seeds or arils before serving.

My Tip:

eggless, no gelatin and no artificial colours used.
