ABOUT Chicken Pot Pie Using Dry Soup Mix RECIPE

A chicken pot pie is a filling of chicken meat and other savoury items. The pot pie is one of the popular cuisines in American lunch menu. Traditionally we use chicken broth to make the pot pie. I came up with a variation and used here dry cheddar and mashed potato soup mix. This is my favorite potpie recipe now and you can serve them in supper or at night.

Ingredients Serving: 2

  1. For Pie Crust :
  2. 1 cup all purpose flour
  3. 1 tsp Baking powder
  4. 5 1/2 tbsp unsalted butter(cold)
  5. 1/2 tsp Salt
  6. For Pie Mixture :
  7. 1 boneless chicken breast cut into cubes
  8. 1/2 red bell pepper finely chopped
  9. 1/2 green bell pepper finely chopped
  10. 1 bunch of green onion finely chopped
  11. 1 small carrot peeled and finely chopped
  12. 1 tsp Ginger paste
  13. 1 tsp Garlic paste
  14. 1/2 cup dry cheddar and mashed potato mix
  15. 1 cup skim milk
  16. 2 large eggs
  17. 1/2 cup grated parmesan cheese
  18. 1 tsp black pepper
  19. 1 tsp cayenne pepper
  20. salt as per taste
  21. 1 tbsp cooking Oil
  22. Unsalted butter to grease the pie pan

Instructions

  1. Preheat the oven to 425F or 220C. Grease the pie pan with unsalted butter. Keep it aside.
  2. Prepare the pie pastry dough. Cut butter into small cubes . Add baking powder , salt into the flour and then add butter into it . Mix it by hand till the flour blends well with the butter. Take a little less than a quarter of ice cold water and knead it into a small dough. Wrap the dough with a plastic clear wrap and refrigerate it for 30 minutes.
  3. Marinade the chicken and set it aside for 15 minutes. For marinading, I used salt , half of black pepper powder and ginger garlic paste.
  4. Saute the chicken on a non-stick pan for 5-8 minutes till the pinkness is gone and the chicken turns light golden color. Take it out on a plate. Saute the vegetables in the same pan.
  5. In a mixing bowl , mix the milk and the eggs and whisk it. Put the dry soup mix in a little amount of lukewarm water, so that there are no lumps. Add this to the bowl containing egg mixture. Blend it nicely by hand. Add the parmesan cheese, black pepper and the cayenne pepper.
  6. Take out the refrigerated dough and spread into a 12 inch round circle on a lightly floured surface by using a rolling pin.
  7. Slowly roll the pie crust over the rolling pin. Hold up the rolling pin, carefully put it on the pie pan and spread the pie crust into deep pie pan so that the whole pie pan is fully covered.
  8. Put the chicken pieces into the bottom of the crust. Spread half of the fried vegetables over it. Add the pie mixture and then top it with rest of the vegetables.
  9. Put the pan into preheated oven. Bake it for 15 minutes. Cool the oven to 350F and bake for another 25 minutes.
  10. Take out the pie pan and let it cool for 20-30 minutes. Take out the chicken pot pie and serve it hot.
