ABOUT Banana Yogurt Bars RECIPE

Banana yogurt snack bars are so soft and loaded with chocolate and banana flavor. They have an added boost of yogurt and whole wheat flour for a healthier treat. Kids love having these for a snack.

Ingredients Serving: 4

Butter softened 6Tbsp/85gm
Brown sugar 1/3 cup
Granulated sugar 1/3cup
Plain yogurt 1/3 cup
Baking powder 2Tsp
Salt 1/2 Tsp
Mashed,ripe banana (about 3 bananas) 1cup
Vanilla extract 1Tsp
Whole wheat flour 2cup
Chocolate chips 1 cup
Flaxseed powder 1Tbsp
Hot water 3Tbsp

Instructions

Add the tablespoon of flaxseed powder to a bowl.
Add 3 tablespoons of hot water to flaxseed powder and stir.
Let rest for 5 minutes to thicken.
The gelatinous consistency is how it functions like an egg in recipe.
Preheat oven to 180*C for 10 minutes.
Grease a pan with cooking spray or line with parchment paper.
In a mixing bowl, combine butter, brown sugar, sugar, yogurt, baking powder and salt. Beat until combined.
Add flax egg, mashed bananas and vanilla. Beat well until combined.
Add in flour and beat just until combined.
Stir in chocolate chips.Reserve a few chocolate chips to sprinkle on top of dough before baking.
Spread into the baking dish and top with the reserved chocolate chips.
Bake for 25-30 minutes or until toothpick inserted comes out clean and bars are puffed up.
Let them cool completely and then cut into bars.
