ABOUT Kolhapuri Vegetables RECIPE

Kohlapuri vegetables as the name suggests is a popular dish of Kohlapur city which is located in the South-west corner of Maharashtra. It's an eclectic mix of vegetables with dessicated coconut and is traditionally known to be spicy.

Ingredients Serving: 4

  1. 1/2 kg mixed vegetables-chopped
  2. 2 Tbsp yogurt (mix with ginger-garlic paste & leave for 3-4 hours)
  3. 1 tsp ginger-garlic paste
  4. 2 tsp lemon juice
  5. 1/2 tsp Salt
  6. 2 tbsp Oil
  7. 1/2 cup onion-grated
  8. Dry roast separately and grind:
  9. 1/4 cinnamon
  10. 1/2 tsp cloves
  11. 1/4 tsp peppercorns and black cumin
  12. 1/4 dry grated coconut
  13. 1 Tbsp coriander seeds
  14. 2 Kashmiri mirchi

Instructions

  1. Mix the vegetables, yogurt, ginger-garlic paste, lemon juice, salt and grated onions. Keep aside.
  2. Heat oil and add the onions and stir-fry till light brown.
  3. Add the ground masala, saute till well, mixed and add the vegetable mixture.
  4. Bring to a boil, lower the heat, simmer for 3-4 minutes and serve.
