ABOUT Shrewsbury Biscuits RECIPE

A melt in the mouth biscuit with a hint of lemon, a true celebration of butter.

Ingredients Serving: 10

  1. Butter (unsalted) - 250g (at room temperature)
  2. Sugar powder - 175g
  3. Flour - 350g
  4. Baking powder - 5g
  5. Salt - a pinch
  6. Lemon zest - 1/2 tsp
  7. Vanilla essence - 1/2 tsp
  8. Fresh milk / curd / water to mix (if required)

Instructions

  1. Sieve the flour and baking powder. Add a pinch of salt and set aside.
  2. Cream the butter on a clean flat surface or a big plate till light and fluffy.
  3. Add the vanilla essence and lemon zest and mix
  4. Add the flour baking powder mix slowly and mix gently to get a soft dough consistency. Add fresh milk / curd / water if the dough feels very dry and is not binding together. You may not always require it.
  5. Rest the dough for about 10 mins.
  6. Pre-heat the oven to 150 C.
  7. Roll out the dough to about 3/4th inch thickness.
  8. Using a cookie cutter cut out desired shaped cookies and place them in a tray with some space in between. Traditional Shrewsbury biscuits are always round in shape.
  9. Bake the cookies for 20-25 mins till them turn slightly golden on the edges. The biscuits are generally a pale yellow in colour.
  10. Serve with some piping Earl Grey or any other tea of your choice.
