ABOUT Southern Oven Fried Chicken RECIPE

Fried chicken is the United States Southern Cuisine and is also known as the Soul Food.Southern Style chicken is cooked in buttermilk and infused with spices.This is my recipe of a healthy version of southern fried chicken. Instead of deep fry, I have oven fried the chicken which are marinaded in buttermilk and infused with spices like black pepper, cajun spice seasoning, madras curry powder, rosemary and sriracha sauce and then breaded. The oven fried chicken is crispy from outside and soft inside.

Ingredients Serving: 4

  1. 4 skinless boneless chicken thighs
  2. 1 cup buttermilk
  3. 2 tsp madras curry powders
  4. 2 tsp cajun spice seasoning
  5. 1 tsp ground black pepper
  6. 1 tsp finely chopped dried or fresh rosemary leaves
  7. 1 tbsp sriracha sauce
  8. For preparing bread crumbs :
  9. 6 Bread Slices
  10. 1 tsp turmeric powder
  11. 1 tsp red chilly powder
  12. Pinch of salt
  13. 4.5 tbsp grated parmesan cheese
  14. Note : You can also use store bought panko bread crumbs instead for breading. Use 1.5 cups of panko crumbs. The measure of the seasoning and parmesan cheese into the crumbs will remain the same.

Instructions

  1. Wash and clean the chicken with cold water. Pat it dry and cut each thigh into half. Add the chicken pieces into a bowl.
  2. Sprinkle cajun spice seasoning, madras curry powder, black pepper powder and salt over the chicken. Add sriracha sauce into the buttermilk and add it into the bowl.
  3. Mix and submerge the chicken in the buttermilk. Leave the marinaded chicken to rest in fridge for atleast 2 hours.
  4. Prepare the bread crumbs. Lightly toast the breads and grind it coarsely in a mixer or food processor. Combine the bread crumbs, parmesan cheese,turmeric powder, red chilly powder and pinch of salt in a shallow bowl. Keep the seasoned bread crumbs aside.
  5. After the chicken has rested well, its time to bake. Preheat the oven to 200C and line a baking pan with an aluminium foil and grease it with a cooking spray.
  6. Remove the chicken from the buttermilk mixture, draining off the excess drip and dredge it in the seasoned breadcrumb mixture until evenly coated on all sides.
  7. Lay the breaded chicken pieces flat on the baking pan and bake it in the preheated oven for 25-30 minutes. Let the pieces rest in the pan for 10 minutes before taking it out on a serving plate.
  8. Serve the oven fried chicken pieces hot with a coriander mint chutney or any hot sauce.
