ABOUT Victoria Sponge Cake RECIPE

I just got back from London and this is one cake that I ate non-stop over there. In London, in almost all the bakeries, Tea places and cafes I found one thing that was omnipresent - Victoria Sponge Cake. It was love at first sight for me. I was taken immediately by these mini sponge cakes sandwiched together with jam and dusted with powdered sugar. The best part was, they were not covered with pretty frosting. It is widely written that the Victoria Sponge was Queen Victoria’s favourite cake and it was originated at the nursery tea

Ingredients Serving: 4

  1. 3/4 cup unsalted butter, at room temperature
  2. 3/4 cup sugar
  3. 3/4 cup Cake flour or, self -rising flour
  4. 3 eggs - well beaten
  5. powdered sugar for dusting
  6. 4 tbsp Strawberry Jam
  7. 1/2 cup honey flavored Greek Yogurt (optional)

Instructions

  1. For Sponge cakes: Cream the butter and sugar together until the mixture is pale and light.
  2. Gradually add the beaten eggs, mixing well between each addition
  3. Sift the flour into the bowl and fold in until the mixture is glossy and smooth.
  4. Divide the mixture between the mini cake tins
  5. Bake on the middle shelf of the oven for about 15 minutes until golden-brown at 190 C
  6. Wait for the cake to cool completely
  7. Cut each cake into half horizontally
  8. Spread a layer of yogurt on each cake base Drizzle the jam over the yogurt Place the sponge tops on and lightly sift icing sugar over the cakes.
