ABOUT MENDIANTS RECIPE

Mendiants are bite-sized discs of chocolate topped with fruits and nuts. The French word “mendiant” refers to both beggars as well as those of monastic persuasion.

  1. 4 ounces of dark couverture chocolate
  2. 4 ounces of milk chocolate
  3. Toppings as per choice (almonds, hazelnuts, craneberries, pecans etc )

Instructions

  1. In a microwave, melt on medium heat for short periods being very careful not to overheat the chocolate. Line a cookie sheet with Heavy Weight Dipping Sheets (glossy side up), waxed paper or any non-stick surface.
  2. Spoon chocolate onto the cookie sheet in tablespoons, leaving about 2 inches between each dollop.
  3. Tap the cookie sheet gently on the counter a few times so that the chocolate spreads a bit and becomes smooth. This will also get out the air bubbles. Don't tap it so hard that it becomes one solid tray of chocolate. You want the chocolate to spread so that each dollop is about the size of a medium cookie.
  4. Toppings should be added quickly so the toppings are firmly attached to the mendiant when the chocolate sets. Sprinkle the top of each chocolate disc with toppings of your choice and refrigerate until set (about 10 minutes).
  5. Seal in an airtight container until ready to serve. Store at room temperature in low humidity.
