Chocolate Soufflé

Ingredients to make Chocolate Soufflé

  • butter - 1 Tbsp (Melted) + 3 Tbsp(45 gm)
  • Granulated sugar - 4 tsp+1/4 cup
  • egg Yolk -1
  • egg whites - 2
  • Bittersweet chocolate - 60 gm
  • salt -a pinch
  • Vanilla extract -1/2 tsp
  • Cream of tarter -1/2 tsp OR salt - a pinch
  • Icing sugar - For dusting

How to make Chocolate Soufflé

  1. Brush the Each Ramekins with the melted Butter and coating with 2 tsp sugar with each ramekins. Place the ramekins in fridge.
  2. Melt the 3 tbsp butter and chopped bittersweet chocolate in double boiler or Microwave safe bowl. Whisk it well. Add the egg yolk,salt and vanilla extract.whisk to combine.
  3. Now preheat the oven at 200 °C.In a bowl add the egg whites and whip it.Once it foamy add the cream of tarter OR a pinch of salt.Then slowly add the 1/4 cup sugar,whip it well until it becomes soft stiff peaks and glossy.
  4. Now add half of the meringue to the chocolate mixture and fold to lighten.Then add the remaining meringue to the mixture and fold it gently.
  5. Remove ramekins from the mixture drop the mixture into each ramekins all the way to the top. With the help of spatula smooth off the top.
  6. Run your thump along inside the ramekins, all the way around.This will allow your soufflé to rise higher in final stage.
  7. Place the soufflés in baking tray and bake it 14-15 mins until the soufflés have risen and tops are slightly browned.
  8. When its done,remove from the oven and dust with icing sugar. Serve it immediately

My Tip:

*Dont skip the sugar coating in each ramekins,it allows the egg mixture something to rises up in the oven.
