ABOUT Apple, Grapes, and Candied Walnuts Michigan Salad RECIPE

This is a Michigan salad that is popular in the United States. This type of salad is typically topped with dried cherries,blue cheese, and a vinaigrette dressing. Some recipes use dried cranberries instead of cherries, add other kinds of fruit such as apple or mandarin orange, omit or substitute the blue cheese, and/or add walnuts or pecans. My apple, red grapes and walnut salad has a bed of lettuce that is topped with apples and red grapes cooked in balsamic vinegar and brown sugar, and caramelised walnuts.

Ingredients Serving: 2

  1. 1 Green Apple
  2. 1 cup red grapes
  3. 1/3 cup walnuts
  4. 2 tbsp granulated sugar or cast sugar
  5. 1 tbsp light or dark brown sugar
  6. 3.7 cups torn lettuce leaves
  7. 1 garlic crushed and finely chopped or grated
  8. 1/2 tsp Dijon mustard
  9. 2 tsp Balsamic vinegar
  10. 2 tsp olive oil
  11. 1/4 tsp finely chopped basil leaves
  12. 1/4 tsp black salt
  13. 1/4 tsp white or kosher salt

Instructions

  1. Wash and clean the apple and grapes. Remove the core and cut the apple into thin slices. Heat a non stick pan and add the apples and the grapes.
  2. Add 1 tsp balsamic vinegar and 1 tablespoon dark brown sugar. Cook the fruits on low flame till they absorb the vinegar and sugar. Take off the heat and let it cool in the pan.
  3. Next, caramelize the walnuts. Heat a separate pan on medium high heat. Add cast sugar or granulated sugar and let it caramelize. As soon as the sugar melts, add the walnuts.
  4. Stir with a spoon or wooden handle for a minute or two and take it out on a parchment paper or a greased flat plate. Let it cool.
  5. While the fruits and the caramelised walnuts are cooling, prepare the vinaigrette dressing.
  6. Combine basil, garlic, olive oil, 1 tsp balsamic vinegar, dijon mustard,black salt, and white salt in a bowl. Whisk and mix .
  7. Once the fruits and walnuts are completely cooled, start preparing the michigan salad. Crush the caramelised walnuts into small chunks.
  8. Lay the lettuce leaves on a salad bowl or plate. Top it with cooked apples and grapes and any remaining liquid in the pan, they were cooked.
  9. Add and spread the vinaigrette dressing evenly over the salad. Finish it off with caramelised walnuts at the top.
