In an open boil water, add salt and 1tbsp oil to it.
After the water boils add pasta to it.
Cook it uncovered and slightly stir in between. Do not mix or stir vigrously, pasta will break.
After they are done, transfer into sieve with big holes to remove water.
Pour cold water on it so that they don't stick to each other. Also add few drops of oil to it. Let it cool on room temperature.
Now time to prepare white sauce.
Take a small non stick kadhai. Add remaining 1 tsp oil and butter heat on low flame. Oil is added to prevent butter from burning.
Add maida and saute for minute as maida turns little pinkish add milk and let it come to boil.
Then slow the gas and add grated cheese and mix well. Cook just till cheese melts. Switch off gas. And white sauce is ready.
In another pan heat little butter and add cooled pasta to it. Saute for a minute, this is done to bring an glaze to the pasta. Now add white sauce to it and mix well. Add oregano and black pepper for seasoning and mix again. Switch off gas and grate some more cheese for that extra cheesy effect.
Transfer onto serving plate and yummy cheesy pasta are ready.
Serve hot and enjoy.
